chickpeas, drained and rinsed

diced tomatoes

vegetable broth

spinach, chopped

Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Stir in minced garlic and chopped red bell pepper, cook for another 3 minutes.
Add ground cumin, ground coriander, smoked paprika, and chili flakes. Cook for 1 minute.
Add chickpeas, diced tomatoes, and vegetable broth. Bring to a boil.
Reduce heat and let simmer for 20 minutes.
Stir in chopped spinach and cook until wilted, about 2 minutes.
Season with salt and pepper to taste. Serve hot.
