Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon lemon juice optional

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and minced garlic. Sauté until onions are translucent.
  3. 3. Stir in cumin, paprika, and chili powder. Cook for another minute.
  4. 4. Add red lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat and let it simmer for 25-30 minutes, or until lentils are tender.
  6. 6. Season with salt and black pepper to taste. Add lemon juice if using.
  7. 7. Serve hot and enjoy!
