Ingredients 

Main Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • to taste Salt and pepper
  • 2 tablespoon olive oil
  • 1 bay leaf
  • 1 cup spinach, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Sauté until softened.
  3. Stir in cumin, paprika, and cayenne pepper. Cook for 1 minute.
  4. Add lentils, diced tomatoes, vegetable broth, and bay leaf. Bring to a boil.
  5. Reduce heat and simmer for 30-35 minutes, until lentils are tender.
  6. Stir in spinach and cook for another 5 minutes.
  7. Season with salt and pepper to taste. Remove bay leaf before serving.
