Spicy Lentil Vegetable Stew
A hearty and spicy vegan stew packed with lentils and vegetables.

Main Ingredients
- 1 cup lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper
- to taste Salt and pepper
- 2 tablespoon olive oil
- 1 bay leaf
- 1 cup spinach, chopped
Heat olive oil in a large pot over medium heat.
Add onion, carrots, celery, and garlic. Sauté until softened.
Stir in cumin, paprika, and cayenne pepper. Cook for 1 minute.
Add lentils, diced tomatoes, vegetable broth, and bay leaf. Bring to a boil.
Reduce heat and simmer for 30-35 minutes, until lentils are tender.
Stir in spinach and cook for another 5 minutes.
Season with salt and pepper to taste. Remove bay leaf before serving.
