  • 8 oz rice noodles
  • ¼ cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon sriracha
  • 1 tablespoon maple syrup
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 cup carrots, julienned
  • 1 cup bell peppers, sliced
  • ¼ cup green onions, chopped
  • ¼ cup cilantro, chopped

Instructions 

  1. 1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. 2. In a mixing bowl, whisk together peanut butter, soy sauce, sriracha, maple syrup, sesame oil, and minced garlic until smooth.
  3. 3. In a pan, sauté carrots and bell peppers until tender.
  4. 4. Add the cooked noodles and peanut sauce to the pan. Toss to combine and heat through.
  5. 5. Serve topped with green onions and cilantro.
