Spicy Sweet Potato and Black Bean Tacos

Main Ingredients
- 2 medium Sweet Potatoes peeled and diced
- 1 can Black Beans drained and rinsed
- 1 tablespoon Olive Oil
- 1 teaspoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- 8 small Tortillas
Toppings
- 1 cup Salsa
- 1 cup Guacamole
- 1 cup Shredded Lettuce
- 1 cup Diced Tomatoes
Preheat oven to 425°F (220°C).
Toss diced sweet potatoes with olive oil, chili powder, cumin, garlic powder, and salt. Spread on a baking sheet.
Roast sweet potatoes for 25-30 minutes, until tender and slightly crispy.
In a skillet, heat black beans over medium heat until warm.
Warm tortillas in a dry skillet or microwave.
Assemble tacos by placing sweet potatoes and black beans on tortillas. Add desired toppings.
