Ingredients 

Main Ingredients

  • 8 oz rice noodles cooked according to package instructions
  • 1 cup shredded carrots
  • 1 cup red bell pepper thinly sliced
  • 1 cup cucumber thinly sliced
  • ¼ cup cilantro chopped
  • ¼ cup green onions chopped

Peanut Sauce

  • ¼ cup peanut butter smooth
  • 2 tablespoon soy sauce
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon maple syrup
  • 1 teaspoon sriracha adjust to taste
  • 1 clove garlic minced
  • 2 tablespoon water to thin the sauce

Instructions 

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, sriracha, minced garlic, and water until smooth.
  3. In a large bowl, combine the cooked noodles, shredded carrots, sliced red bell pepper, sliced cucumber, chopped cilantro, and chopped green onions.
  4. Pour the peanut sauce over the noodle mixture and toss to coat evenly.
  5. Serve immediately or chill in the refrigerator for 30 minutes for a cold salad. Enjoy!
