Spicy Thai Peanut Noodles

Main Ingredients
- 8 oz rice noodles
- 1 cup shredded carrots
- 1 cup bell pepper, thinly sliced
- ¼ cup green onions, chopped
- ¼ cup cilantro, chopped
Peanut Sauce
- ½ cup peanut butter
- 2 tablespoon soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon sriracha
- 1 tablespoon lime juice
- ¼ cup water
1. Cook the rice noodles according to package instructions. Drain and set aside.
2. In a mixing bowl, whisk together peanut butter, soy sauce, maple syrup, sriracha, lime juice, and water until smooth.
3. In a large bowl, combine cooked noodles, shredded carrots, bell pepper, green onions, and cilantro.
4. Pour the peanut sauce over the noodle mixture and toss to coat evenly.
5. Serve immediately or chill in the refrigerator for 30 minutes for a cold noodle salad.
