Ingredients 

Main Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 inch piece ginger, minced
  • 2 tomatoes, chopped
  • 1 can coconut milk
  • 2 tablespoon curry powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 2 tablespoon vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions 

  1. Heat oil in a large pot over medium heat. Add cumin and mustard seeds, cook until they start to pop.
  2. Add chopped onions, garlic, and ginger. Sauté until onions are translucent.
  3. Stir in curry powder, turmeric, and chili powder. Cook for 1-2 minutes.
  4. Add diced potatoes and chopped tomatoes. Cook for 5 minutes.
  5. Pour in coconut milk, bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  6. Season with salt to taste. Garnish with fresh cilantro before serving.
