Ingredients 

Main Ingredients

  • 12 oz pasta
  • 2 cups fresh spinach
  • 1 can artichoke hearts, drained and chopped
  • 3 cloves garlic, minced
  • 1 cup unsweetened almond milk
  • 2 tablespoon olive oil
  • 2 tablespoon nutritional yeast
  • Salt and pepper to taste

Instructions 

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add chopped artichoke hearts and cook for 5 minutes.
  4. Add spinach and cook until wilted.
  5. Pour in almond milk and nutritional yeast. Stir well.
  6. Add cooked pasta to the pan. Toss to combine.
  7. Season with salt and pepper to taste. Serve hot.
