Ingredients

  • 12 large mushrooms
  • 2 cups fresh spinach, chopped
  • 1 cup vegan feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Clean mushrooms and remove stems.
  3. Sauté garlic in olive oil until fragrant.
  4. Add spinach and cook until wilted.
  5. Mix spinach, garlic, and vegan feta.
  6. Stuff mushrooms with mixture.
  7. Bake for 20 minutes or until mushrooms are tender.
