Ingredients

  • 4 bell peppers any color
  • 2 cups fresh spinach chopped
  • 1 cup vegan feta cheese crumbled
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a mixing bowl, combine chopped spinach, vegan feta, olive oil, garlic powder, onion powder, salt, and pepper.
  4. Stuff the bell peppers with the spinach mixture.
  5. Place the stuffed peppers in a baking dish and bake for 30 minutes.
  6. Serve hot and enjoy!
