Spinach and Vegetable Soup

Main Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onion
- 2 cloves garlic, minced
- 2 cups chopped carrots
- 2 cups chopped celery
- 4 cups vegetable broth
- 4 cups fresh spinach
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. Heat the olive oil in a pot over medium heat.
2. Add the chopped onion and garlic, and sauté until the onion is translucent.
3. Add the chopped carrots and celery, and cook for about 5 minutes.
4. Pour in the vegetable broth and bring to a boil.
5. Reduce the heat and let it simmer for 20 minutes, or until the vegetables are tender.
6. Add the fresh spinach and cook for another 5 minutes.
7. Season with salt and black pepper to taste. Serve hot.
