Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 4 cups vegetable broth
  • 4 cups fresh spinach
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. 1. Heat the olive oil in a pot over medium heat.
  2. 2. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. 3. Add the chopped carrots and celery, and cook for about 5 minutes.
  4. 4. Pour in the vegetable broth and bring to a boil.
  5. 5. Reduce the heat and let it simmer for 20 minutes, or until the vegetables are tender.
  6. 6. Add the fresh spinach and cook for another 5 minutes.
  7. 7. Season with salt and black pepper to taste. Serve hot.
