Ingredients 

Main Ingredients

  • 8 oz pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 can artichoke hearts, drained and chopped
  • 4 cups fresh spinach
  • 1 cup unsweetened almond milk
  • 2 tablespoon nutritional yeast
  • Salt and pepper to taste

Instructions 

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add artichoke hearts and cook for 3-4 minutes.
  4. Add spinach and cook until wilted.
  5. Pour in almond milk and nutritional yeast. Stir well.
  6. Add cooked pasta to the pan and mix until well combined. Season with salt and pepper.
  7. Serve hot.
