Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 teaspoon ground cumin
  • 2 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 can diced tomatoes (14 oz)
  • 1 can coconut milk (14 oz)
  • 1 lb fresh spinach, washed and chopped
  • to taste Salt
  • for garnish Fresh cilantro

Instructions 

  1. Heat oil in a large pan over medium heat.
  2. Add onion, garlic, and ginger. Sauté until onion is translucent.
  3. Stir in cumin, coriander, turmeric, and garam masala. Cook for 1 minute.
  4. Add diced tomatoes and coconut milk. Bring to a simmer.
  5. Add spinach and cook until wilted. Season with salt.
  6. Garnish with fresh cilantro and serve.
