Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 3 medium potatoes, peeled and diced
  • 5 cups fresh spinach
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add vegetable broth and diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. Add fresh spinach, salt, and black pepper. Cook for another 5 minutes.
  5. Use a blender to puree the soup until smooth. Serve hot.
