Split Pea Soup Recipe
A hearty and comforting vegan soup made with split peas and vegetables.

Main Ingredients
- 2 cups split peas rinsed and sorted
- 1 medium onion chopped
- 2 cloves garlic minced
- 2 medium carrots chopped
- 2 stalks celery chopped
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
- 1 tablespoon olive oil
Heat the olive oil in a large pot over medium heat.
Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
Add the split peas, vegetable broth, thyme, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for about 1 hour, or until the peas are tender.
Use an immersion blender to blend the soup to your desired consistency, or leave it chunky.
Adjust seasoning with more salt and pepper if needed. Serve hot.
