Ingredients

  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • ¼ red onion, thinly sliced
  • 1 avocado, diced
  • ¼ cup sunflower seeds
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions 

  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, avocado, and sunflower seeds.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Drizzle dressing over the salad and toss gently to combine.
  4. Serve immediately.
