Ingredients 

Dough

  • 1.5 cups all-purpose flour
  • 0.5 cup vegan butter, cold and cubed
  • 0.25 cup ice water
  • 1 teaspoon salt

Filling

  • 2 cups mixed spring vegetables (asparagus, peas, radishes, etc.)
  • 1 tablespoon olive oil
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 tablespoon fresh dill, chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix flour and salt. Add vegan butter and mix until crumbly.
  3. Gradually add ice water until dough forms. Chill for 15 minutes.
  4. Roll out dough on a floured surface into a circle.
  5. Toss vegetables with olive oil, salt, pepper, and garlic powder.
  6. Place vegetables in the center of the dough, leaving a border.
  7. Fold edges of dough over the vegetables.
  8. Bake for 30 minutes or until golden brown.
  9. Garnish with fresh dill before serving.
