Ingredients

  • 1 cup Butternut Squash, cubed
  • 1 cup Coconut Milk
  • 2 cloves Garlic, minced
  • 2 tablespoons Nutritional Yeast
  • 1 tablespoon Olive Oil
  • to taste Salt and Pepper

Instructions 

  1. 1. Cook the butternut squash in boiling water until tender, about 10-15 minutes.
  2. 2. Drain the squash and add it to a blender with coconut milk, garlic, nutritional yeast, and olive oil. Blend until smooth.
  3. 3. Pour the sauce into a saucepan and heat over medium heat. Season with salt and pepper to taste.
  4. 4. Serve over your favorite pasta.
