Squash Apple Soup Recipe
A warm, comforting vegan soup made with squash and apples.

Main Ingredients
- 1 medium butternut squash peeled and cubed
- 2 apples peeled, cored, and chopped
- 1 large onion chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
1. In a large pot, sauté the onion and garlic until soft.
2. Add the squash, apples, vegetable broth, salt, pepper, cinnamon, and nutmeg.
3. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until squash and apples are tender.
4. Use a blender to puree the soup until smooth.
5. Serve hot and enjoy!
