Ingredients 

Main Ingredients

  • 1 medium butternut squash peeled and cubed
  • 2 apples peeled, cored, and chopped
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until soft.
  2. 2. Add the squash, apples, vegetable broth, salt, pepper, cinnamon, and nutmeg.
  3. 3. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until squash and apples are tender.
  4. 4. Use a blender to puree the soup until smooth.
