Ingredients 

Main Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 bunch kale, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until softened.
  2. 2. Add butternut squash and cook for 5 minutes.
  3. 3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
  4. 4. Add chopped kale and cook for another 5 minutes.
  5. 5. Use a blender to puree the soup until smooth. Season with salt and pepper.
