Squash Mac and Cheese
A delicious and creamy vegan mac and cheese made with squash.

Main Ingredients
- 1 cup Butternut squash, cooked and mashed
- 1 cup Cashews, soaked
- 2 cups Pasta Use your favorite type
- 1 cup Vegetable broth
- ¼ cup Nutritional yeast
- 1 tablespoon Lemon juice
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- to taste Salt and pepper
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a blender, combine the cooked squash, soaked cashews, vegetable broth, nutritional yeast, lemon juice, garlic powder, and onion powder. Blend until smooth.
3. Pour the sauce into a saucepan and heat over medium heat until warm. Season with salt and pepper to taste.
4. Mix the cooked pasta with the sauce. Serve immediately.
