Ingredients 

Pie Crust

  • 2 cups All-purpose flour
  • ½ cup Vegan butter cold
  • ¼ cup Ice water

Filling

  • 4 cups Strawberries hulled and sliced
  • 1 cup Granulated sugar
  • ¼ cup Cornstarch
  • 1 tablespoon Lemon juice

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the flour and vegan butter. Use a fork or pastry cutter to mix until crumbly.
  3. Add ice water a tablespoon at a time until the dough comes together. Form into a ball, wrap in plastic, and refrigerate for 30 minutes.
  4. Roll out the dough and fit it into a pie dish. Trim and crimp the edges.
  5. In another bowl, mix strawberries, sugar, cornstarch, and lemon juice. Pour into the pie crust.
  6. Bake for 45 minutes or until the crust is golden and the filling is bubbly. Let cool before serving.
