Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 250 g mushrooms, sliced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 2 tablespoon flour
  • 500 ml vegetable broth
  • 200 ml coconut milk
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked pasta or rice (to serve)

Instructions 

  1. Heat olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the mushrooms, smoked paprika, and thyme. Cook until mushrooms are tender.
  3. Stir in the flour and cook for another minute.
  4. Gradually add the vegetable broth, stirring constantly until the mixture thickens.
  5. Pour in the coconut milk and simmer for 10 minutes. Season with salt and pepper.
  6. Serve over cooked pasta or rice and garnish with fresh parsley.
