Stuffed Bell Peppers Recipe

Main Ingredients
- 4 Bell Peppers tops cut off and seeds removed
- 1 cup Cooked Quinoa
- 1 cup Black Beans rinsed and drained
- 1 cup Corn Kernels fresh or frozen
- 1 cup Diced Tomatoes canned or fresh
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, paprika, salt, and black pepper.
Stuff each bell pepper with the quinoa mixture.
Place the stuffed peppers in a baking dish and cover with foil.
Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes.
Serve hot and enjoy!
