Ingredients 

Main Ingredients

  • 4 Bell Peppers tops cut off and seeds removed
  • 1 cup Cooked Quinoa
  • 1 cup Black Beans rinsed and drained
  • 1 cup Corn Kernels fresh or frozen
  • 1 cup Diced Tomatoes canned or fresh
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, paprika, salt, and black pepper.
  3. Stuff each bell pepper with the quinoa mixture.
  4. Place the stuffed peppers in a baking dish and cover with foil.
  5. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes.
  6. Serve hot and enjoy!
