  • 4 pieces Vegan chicken breasts
  • 1 cup Cooked quinoa
  • 1 cup Chopped spinach
  • 1 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • To taste Salt and pepper

Instructions 

  1. 1. Preheat oven to 375°F (190°C).
  2. 2. In a mixing bowl, combine cooked quinoa, chopped spinach, olive oil, garlic powder, onion powder, salt, and pepper.
  3. 3. Cut a pocket into each vegan chicken breast and stuff with the quinoa mixture.
  4. 4. Place stuffed vegan chicken breasts in a baking dish and bake for 30 minutes or until golden brown.
  5. 5. Serve hot.
