Instructions
Preheat oven to 375°F (190°C).
In a mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and black pepper.
Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
Cover the baking dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 15 minutes, until peppers are tender.
Serve hot.
