Ingredients 

Main Ingredients

  • 4 Green Bell Peppers tops cut off and seeds removed
  • 1 cup Cooked Quinoa
  • 1 cup Black Beans rinsed and drained
  • 1 cup Corn Kernels
  • 1 cup Diced Tomatoes
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and black pepper.
  3. Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
  4. Cover the baking dish with foil and bake for 30 minutes.
  5. Remove the foil and bake for an additional 15 minutes, until peppers are tender.
  6. Serve hot.
