Instructions
Preheat oven to 375°F (190°C).
In a mixing bowl, combine cooked quinoa, black beans, corn, cumin, chili powder, olive oil, salt, and pepper.
Stuff each jalapeño half with the quinoa mixture.
Place stuffed jalapeños on a baking sheet and bake for 20 minutes.
Remove from oven and let cool slightly before serving.
