Ingredients 

Main Ingredients

  • 12 jalapeños halved and seeded
  • 1 cup cooked quinoa
  • 1 cup black beans rinsed and drained
  • 1 cup corn kernels fresh or frozen
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked quinoa, black beans, corn, cumin, chili powder, olive oil, salt, and pepper.
  3. Stuff each jalapeño half with the quinoa mixture.
  4. Place stuffed jalapeños on a baking sheet and bake for 20 minutes.
  5. Remove from oven and let cool slightly before serving.
