Stuffed Pepper Soup

Main Ingredients
- 1 cup quinoa rinsed
- 4 bell peppers diced
- 1 onion chopped
- 3 cloves garlic minced
- 1 can diced tomatoes 15 oz
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- to taste salt and pepper
1. Cook quinoa according to package instructions.
2. In a large pot, sauté onions and garlic until fragrant.
3. Add bell peppers and cook until softened.
4. Stir in diced tomatoes, vegetable broth, oregano, and basil.
5. Bring to a boil, then reduce heat and simmer for 20 minutes.
6. Add cooked quinoa to the pot and stir to combine.
7. Season with salt and pepper to taste. Serve hot.
