Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 4 bell peppers diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 can diced tomatoes 15 oz
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper

Instructions 

  1. 1. Cook quinoa according to package instructions.
  2. 2. In a large pot, sauté onions and garlic until fragrant.
  3. 3. Add bell peppers and cook until softened.
  4. 4. Stir in diced tomatoes, vegetable broth, oregano, and basil.
  5. 5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. 6. Add cooked quinoa to the pot and stir to combine.
  7. 7. Season with salt and pepper to taste. Serve hot.
