Stuffed Shells Recipe

Main Ingredients
- 20 pieces Jumbo pasta shells
- 2 cups Marinara sauce
- 1 cup Vegan ricotta cheese
- 1 cup Spinach, chopped
- 1 tablespoon Olive oil
- 2 cloves Garlic, minced
- 1 teaspoon Salt
- 1 teaspoon Black pepper
Preheat oven to 375°F (190°C).
Cook pasta shells according to package instructions. Drain and set aside.
In a saucepan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
Add chopped spinach, salt, and pepper. Cook until spinach is wilted.
In a mixing bowl, combine vegan ricotta cheese and cooked spinach mixture.
Stuff each pasta shell with the ricotta-spinach mixture.
Spread a layer of marinara sauce on the bottom of a baking dish. Place stuffed shells on top.
Pour remaining marinara sauce over the shells.
Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes.
Serve hot and enjoy!
