Ingredients

  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup vegan butter, softened
  • 1 cup granulated sugar
  • ¼ cup non-dairy milk
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together vegan butter and sugar until light and fluffy.
  4. Add non-dairy milk and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Roll dough into balls and place on a baking sheet.
  7. Flatten each ball slightly with the bottom of a glass.
  8. Bake for 10 minutes or until edges are lightly golden.
  9. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
