- 1 cup Grated Summer Squash
- 1 cup All-Purpose Flour
- ½ cup Sugar
- ¼ cup Vegetable Oil
- 1 teaspoon Baking Powder
- ½ teaspoon Baking Soda
- ½ teaspoon Salt
- 1 teaspoon Vanilla Extract
1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, combine grated summer squash, sugar, and vegetable oil. Mix well.
3. Add flour, baking powder, baking soda, salt, and vanilla extract to the bowl. Stir until just combined.
4. Pour the batter into a greased loaf pan.
5. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
