Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the sliced summer squash, cherry tomatoes, olive oil, salt, and pepper.
  3. Transfer the mixture to a baking dish and spread it out evenly.
  4. Sprinkle the breadcrumbs and vegan cheese on top.
