  • 2 cups sushi rice
  • 2 cups water
  • ¼ cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

Instructions 

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.
  3. In a small saucepan, combine rice vinegar, sugar, and salt. Cook over medium heat until the sugar and salt are dissolved. Do not boil.
  4. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture with a wooden spoon. Let it cool to room temperature before using.
