Sweet and Sour Tofu Recipe

Main Ingredients
- 400 g Firm Tofu cubed
- 1 cup Bell Peppers chopped
- 1 cup Pineapple Chunks canned or fresh
- 1 tablespoon Vegetable Oil
Sauce Ingredients
- ¼ cup Soy Sauce low sodium
- ¼ cup Rice Vinegar
- 3 tablespoon Ketchup
- 2 tablespoon Brown Sugar
- 1 tablespoon Cornstarch mixed with 2 tablespoon water
1. Press the tofu to remove excess water, then cut into cubes.
2. Heat vegetable oil in a frying pan over medium heat. Add tofu and cook until golden brown on all sides. Remove and set aside.
3. In the same pan, add bell peppers and pineapple chunks. Cook for 5 minutes.
4. In a bowl, mix soy sauce, rice vinegar, ketchup, and brown sugar. Add to the pan and bring to a simmer.
5. Add the cornstarch mixture to the pan and stir until the sauce thickens.
6. Return the tofu to the pan and coat with the sauce. Cook for another 2-3 minutes.
7. Serve hot with rice or noodles.
