Sweet Jalapeno Cornbread

Main Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- ¼ cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup almond milk
- ¼ cup vegetable oil
- ¼ cup applesauce
- 2 tablespoon maple syrup
- 2 jalapenos, seeded and diced
Preheat oven to 400°F (200°C). Grease an 8-inch square baking dish.
In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
In another bowl, mix almond milk, vegetable oil, applesauce, and maple syrup.
Add wet ingredients to dry ingredients and stir until just combined.
Fold in diced jalapenos.
Pour batter into prepared baking dish.
Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
Let cool slightly before serving.
