Ingredients 

Main Ingredients

  • 2 medium sweet potatoes peeled and diced
  • 1 can black beans drained and rinsed
  • 1 medium red bell pepper diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 1 tablespoon fresh cilantro chopped, for garnish

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften.
  3. Add diced onion, red bell pepper, and minced garlic. Cook for another 5-7 minutes until vegetables are tender.
  4. Stir in black beans, ground cumin, smoked paprika, salt, and pepper. Cook for another 5 minutes until everything is heated through.
  5. Garnish with fresh cilantro before serving.
