Sweet Potato and Black Bean Stew

Main Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- to taste salt and pepper
- 2 tablespoon olive oil
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add diced sweet potatoes, black beans, diced tomatoes, and vegetable broth. Stir to combine.
Season with cumin, chili powder, paprika, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until sweet potatoes are tender.
Serve hot and enjoy!
