  • 2 medium sweet potatoes, peeled and diced
  • 1 bunch kale, stems removed and chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and cook until they start to soften, about 10 minutes.
  3. Add diced onion and minced garlic, cook until onion is translucent.
  4. Add chopped kale, cook until wilted.
  5. Season with salt and pepper to taste.
