Ingredients 

Main Ingredients

  • 2 cups diced sweet potatoes
  • 1 cup red lentils rinsed
  • 1 can coconut milk
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt or to taste
  • 3 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 handful fresh cilantro chopped, for garnish

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic, curry powder, ground cumin, and ground turmeric. Cook for another minute until fragrant.
  3. Add the diced sweet potatoes, red lentils, coconut milk, vegetable broth, and salt. Stir to combine.
  4. Bring to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the sweet potatoes and lentils are tender.
  5. Adjust seasoning with more salt if needed. Serve hot, garnished with chopped fresh cilantro.
