Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • ¼ teaspoon chili powder
  • 1 large sweet potato, peeled and diced
  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 can coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. Stir in cumin, coriander, turmeric, and chili powder. Cook for 1 minute.
  3. Add sweet potato, red lentils, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in coconut milk, season with salt and pepper. Simmer for another 10 minutes.
  5. Blend the soup until smooth. Serve hot, garnished with fresh cilantro.
