Ingredients 

Main Ingredients

  • 2 large Sweet Potatoes peeled and diced
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 package Vegan Sausage sliced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Paprika
  • ½ teaspoon Cumin
  • ¼ cup Chopped Fresh Parsley for garnish

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and cook for 10-15 minutes until they start to soften.
  3. Add diced onion and cook for another 5 minutes until translucent.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Add sliced vegan sausage, salt, pepper, paprika, and cumin. Cook for another 5-7 minutes until everything is well combined and heated through.
  6. Garnish with chopped fresh parsley and serve hot.
