Ingredients 

Main Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 1 cup quinoa cooked
  • 1 cup corn cooked

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, cumin, paprika, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25-30 minutes until tender.
  4. In a saucepan, heat black beans until warm.
  5. Assemble bowls with quinoa, roasted sweet potatoes, black beans, corn, avocado slices, and lime wedges.
