Instructions
Preheat oven to 400°F (200°C).
Toss sweet potatoes with olive oil, cumin, paprika, salt, and pepper. Spread on a baking sheet.
Roast for 25-30 minutes until tender.
In a saucepan, heat black beans until warm.
Assemble bowls with quinoa, roasted sweet potatoes, black beans, corn, avocado slices, and lime wedges.
