Ingredients 

Main Ingredients

  • 2 medium sweet potatoes peeled and diced
  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 4 large tortillas
  • 1 cup salsa
  • 1 cup guacamole

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, cumin, chili powder, and salt. Spread on a baking sheet and roast for 25-30 minutes, until tender.
  3. In a skillet, heat black beans until warm.
  4. Warm tortillas in a dry skillet or microwave.
  5. Assemble burritos by placing sweet potatoes, black beans, salsa, and guacamole in each tortilla. Roll up and serve.
