Sweet Potato Black Bean Chili Recipe
A hearty and flavorful vegan chili made with sweet potatoes and black beans.

Main Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell pepper. Sauté until softened.
Add sweet potatoes, chili powder, cumin, and smoked paprika. Cook for a few minutes.
Stir in black beans, diced tomatoes, and vegetable broth. Bring to a boil.
Reduce heat and simmer for 20-25 minutes, until sweet potatoes are tender.
Season with salt and pepper to taste. Serve hot.
