Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. 2. Add the minced garlic, ground cumin, chili powder, and paprika. Cook for another minute until fragrant.
  3. 3. Add the diced sweet potatoes, black beans, diced tomatoes, and vegetable broth. Stir to combine.
  4. 4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the sweet potatoes are tender.
  5. 5. Season with salt and pepper to taste. Serve hot.
