Ingredients 

Main Ingredients

  • 2 medium sweet potatoes peeled and diced
  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 8 small corn tortillas
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, toss diced sweet potatoes with olive oil, cumin, paprika, garlic powder, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, until tender and slightly crispy.
  4. In a skillet, heat a bit of oil and add black beans. Cook until heated through.
  5. Warm the corn tortillas in a dry skillet or microwave.
  6. Assemble tacos by placing roasted sweet potatoes and black beans on each tortilla. Add your favorite toppings.
