Ingredients 

Main Ingredients

  • 1 large sweet potato peeled and diced
  • 1 can chickpeas drained and rinsed
  • ½ cup breadcrumbs
  • ¼ cup fresh cilantro chopped
  • ¼ cup onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoon olive oil

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Boil sweet potato until tender, about 10 minutes. Drain and mash.
  3. In a large bowl, combine mashed sweet potato, chickpeas, breadcrumbs, cilantro, onion, garlic, cumin, smoked paprika, salt, and pepper. Mix well.
  4. Form mixture into patties.
  5. Heat olive oil in a skillet over medium heat. Cook patties until golden brown, about 5 minutes per side.
  6. Transfer patties to a baking sheet and bake for 15 minutes.
