Sweet Potato Coconut Soup Recipe

Main Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 can coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 4 cups vegetable broth
- Salt and pepper to taste
- 1 tablespoon olive oil
Heat olive oil in a pot over medium heat.
Add onion, garlic, and ginger. Sauté until fragrant.
Add sweet potatoes and cook for a few minutes.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer until sweet potatoes are tender.
Stir in coconut milk and season with salt and pepper.
Use a blender to puree the soup until smooth.
Serve hot.
