Ingredients 

Main Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until fragrant.
  3. Add sweet potatoes and cook for a few minutes.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer until sweet potatoes are tender.
  5. Stir in coconut milk and season with salt and pepper.
  6. Use a blender to puree the soup until smooth.
  7. Serve hot.
