Main Ingredients
- 2 large sweet potatoes peeled and diced
- 1 medium onion diced
- 1 medium bell pepper diced
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- to taste salt and pepper
- 2 tablespoons fresh parsley chopped
Heat olive oil in a skillet over medium heat.
Add diced sweet potatoes and cook for about 10 minutes, stirring occasionally.
Add onion, bell pepper, and garlic. Cook for another 10 minutes until vegetables are tender.
Season with smoked paprika, ground cumin, salt, and pepper. Stir well.
Garnish with fresh parsley before serving.
